Parts Used: Flowers, Immature seeds/Immature seed pod
Flowers: Dehydrated with heat and used a seasoning or spice
Immature seeds/Immature seed pod: Soaked for 24 hours in clean water. then rinsed under flowing water, afterwards then the process consists of boiling the seeds in two to three changes of water 10 to 20 minutes per boiling, after which they can be consumed like your average vegetable.
Disclosure: Jack Beans (Canavalia Ensiformis, Canavalia Gladiata, Canavalia Rosea) contain several chemical components including Concanavalin A, which may cause poisoning if the plant is prepared incorrectly or consumed in large doses. The symptoms are as follows; headache, nausea, stomach discomfort, convulsions, coma, and potentially death. Several studies have been conducted with the species and show that the toxin Concanavalin A is resistant on some level to heat based processing, hence the need for several processes in its rendering of becoming consumable. Many sources suggest that the mature seeds can be consumed, several of our grow-leads advise against such things due to the toxins building with the age of the specimen, hence the recommendation to eat the immature seeds and immature seed pods when the toxins are at their most minimal number.
